Cacao beans, found at the center of the fruit and surrounded by pulp, are the main ingredient in chocolate and can be eaten raw. Some people enjoy eating the seeds along with the sweet pulp to balance out the bitterness. It tastes like a pure, high quality dark chocolate.

To open a cacao fruit, carefully slice it lengthways on a chopping board. If you want the seeds to remain intact, don't cut the fruit all the way through. Scoop out the beans and pulp with your hands or a spoon.

The cacao fruit can be used in preserves, drinks, desserts and butters. The pulp is high in pectin, making it great for jams, jellies, and chutneys. It can be juiced or added to smoothies and used to make liquor. The pods can be processed into powder for use in various desserts. Cocoa beans can be dried and fermented, before extracting cocoa butter and cocoa solids. Cocoa butter is used to nourish the skin, lips and hair.

Cacao fruit is rich in nutrients such as magnesium, iron, polyphenols, and calcium. It has high levels of antioxidants and vitamins such as E, D, and B.
